Jamaican Food by Elorine Williams

In Jamaica’s heart, where the sun warmly smiles,

A symphony of flavors, a feast that beguiles.

Let’s embark on a journey, a culinary delight,

A poem for Jamaican food, a taste bud’s flight.

Jerk Chicken’s Dance:

In the fires of spice, on charcoal’s embrace,

Jerk Chicken sizzles, a flavourful grace.

Marinated in secrets, a dance on the grill,

A carnival of spices, a Jamaican thrill.

Ackee’s Symphony:

Ackee, the national fruit, in sunlight’s embrace,

Opens its arms, a delicate grace.

With saltfish companionship, a melody unfolds,

In the pot’s sweet song, a story retold.

Callaloo’s Verdant Waltz:

Callaloo, in the garden’s embrace,

A verdant waltz, a vibrant space.

Spinach-like whispers, coconut’s kiss,

In the pot’s embrace, flavors reminisce.

Rice and Peas, Harmony Unveiled:

Rice and Peas, a Caribbean song,

In coconut’s hug, they belong.

Kidney beans dance, with rice they entwine,

A harmony tasted, in every bite’s sign.

Escovitch Fish, Ocean’s Tale:

In the seas’ deep tale, Escovitch unfolds,

Fish bathed in spices, a story untold.

With peppers and onions, a vibrant hue,

A symphony of taste, as the waves renew.

Bammy’s Quiet Strength:

Bammy, the silent strength of the cassava’s embrace,

In frying pan whispers, a quiet grace.

Golden and firm, like the island’s pride,

A sidekick to seafood, on every seaside.

Patty’s Pocket of Joy:

In flaky pastry pockets, secrets unfold,

Patty’s joyous tales, in fillings bold.

Curry chicken, beefy delight,

In each bite, Jamaica’s spirit takes flight.

Rum’s Warm Embrace:

As the sun dips low, and the day takes its leave,

Rum’s warm embrace, a tropical reprieve.

In cocktails and stories, by the seaside so grand,

Jamaican rum, the toast of the land.

In the tapestry of flavours, in the spice-laden air,

Jamaican food, a banquet beyond compare.

A fusion of cultures, a melody of taste,

On the island’s plate, a symphony is embraced.

So let’s raise a glass to the culinary song,

To Jamaica’s table, where hearts belong.

In each dish, a story told,

Of a land where flavours dance, a joy to behold.
